I made these pancakes for Calvin to eat for breakfasts once he started solids and learned to chew, but I like them for me too! And they are so easy!

Feeding a baby can feel like it takes way more brain power than it should. I was looking for something simple, nutritious, finger food friendly, and easy to freeze. I found all of those things in these super easy, 3 ingredient pancakes!
INGREDIENTS
- 1/4 c. quick oats
- 1/2 of a ripe banana
- 1 large chicken egg
DIRECTIONS
- Pour the dry quick oats into a blender and pulse until they are ground to a fine powder
- Add 1 egg and 1/2 a ripe banana to the blender.
- Blend until well combined and smooth
- Pour batter in 2-3″ circles onto heated skillet or frying pan
- Flip pancakes once bubbles form and pop on the uncooked side of the pancake
- Cook for a couple more minutes
- Enjoy!







Calvin absolutely loves these pancakes. This recipe will make 12-15 little (think sand dollar sized) pancakes and he eats 2-3 at a time. To freeze, simply throw them in a ziploc bag and toss them in the freezer! To reheat, I remove a couple from the bag, put them in a microwave safe bowl, and microwave for 20-30 seconds.
When I eat these little suckers, I make them bigger and top them with peanut butter, honey, or maple syrup.
