There’s a chill in the air, leaves covering the ground, and I am thoroughly enjoying my sweaters and my soups.
POTATO SOUP
This is my absolute favorite soup. It’s my Grandma’s recipe and I highly recommend having some sort of bread on the side to dip.
INGREDIENTS
- 2 cans (14.5 oz each) Swanson’s chicken broth
- 1 c. finely chopped celery
- 1/2 c. finely chopped onion OR 1 Tbsp onion powder
- 5 potatoes; peeled and diced into 1 cm cubes
- 1tsp salt and pepper
- 3/4 c. butter
- 3/4 c. all purpose flour
- 1 qt. half and half
- 1/2 c. CheezWhiz

PREPARATION
- Combine chicken broth, celery, onion, potatoes, salt, and pepper in a large pot
- Bring to a boil and boil for 10 minutes, stirring often
- Melt butter and add flour to make a roux. Stir into pot
- Slowly add half and half, stirring constantly
- Add CheezWhiz
- Cook on low until the soup thickens, stirring often
- Serve
TACO SOUP
This soup is the easiest soup in the world to make
INGREDIENTS
- 1 lb hamburger
- 1 can of corn (don’t drain)
- 1 can red kidney beans (don’t drain)
- 4 small or 2 large cans tomato sauce
- 1 pkg taco seasoning
- Sour cream
- Frito Lays corn chips
- Mild cheddar cheese; shredded

PREPARATION
- Brown hamburger and drain fat
- Mix hamburger, corn, beans, tomato sauce, and taco seasoning in a large pot
- Heat soup until completely warmed
- Serve with shredded cheese, sour cream, and Frito corn chips as toppings.
CHICKEN NOODLE SOUP
My mom often makes this recipe during the winter and it’s total comfort food.
INGREDIENTS
- 1 pkg wide egg noodles
- 8 c. water
- 8 chicken bouillon cubes
- Celery; sliced
- Baby carrots; sliced
- Chicken; cooked and cubed

PREPARATION
- Cook chicken
- In a large pot, boil: water, chicken bouillon, celery, carrots, and noodles
- When noodles and vegetables are done, add chicken
- Salt and pepper to taste and serve
