Double Chocolate Brownie Cookies

I am absolutely hooked on these cookies and they are super simple to make! This recipe takes about 30 minutes in total and makes around 4 dozen small cookies!

INGREDIENTS

  • 1 box (18 oz.) brownie mix of your choice
  • 2 eggs
  • 1/4 c. vegetable oil
  • 1/3 c. all purpose flour
  • 1 tsp. vanilla extract
  • 1/2 c. mini semi-sweet chocolate chips

PREPARATION

  1. Preheat oven to 375 degrees Fahrenheit
  2. Combine brownie mix, eggs, vegetable oil, flour, and vanilla extract in a large bowl. Mix thoroughly.
  3. Mix in mini chocolate chips
  4. Roll dough into 1-1 1/2″ round balls
  5. Place dough balls on greased cookie sheet roughly 2″ apart
  6. Bake for 10 minutes. After removing from oven, allow to rest on cookie sheet for 10 additional minutes before transferring cookies to cooling rack or countertop.

If you’d like, you can roll the dough in powdered sugar (like I did in the photo above) before baking to create a crinkle look! Also, I live up in the mountains at a pretty high elevation (about 5,000 feet above sea level). If you live in a lower elevation, start with less flour (closer to a 1/4 cup instead of a 1/3).
