This is one of our family’s favorite meals. It is so quick and simple to make and every single one of us (even our semi-picky toddler) absolutely loves it! It’s also a low-carb meal if that’s something you need to cater to in your home.

INGREDIENTS
- 4 boneless, skinless chicken breasts; thawed (or whatever boneless, skinless cut you prefer)
- 8 ounces plain Philadelphia cream cheese
- 1/3 cup basil pesto
- 1 package (16 oz.) shredded mozzarella cheese
- Tomato and dried basil to serve; optional
PREPARATION
- Preheat oven to 375° Fahrenheit
- Lay chicken breasts flat on the bottom of a greased, glass 9×9 baking dish
- Mix together the cream cheese and basil pesto until thoroughly combined
- Spoon pesto cheese mixture over chicken and spread to cover meat completely
- Top pesto mixture with entire 16 oz. bag of shredded mozzarella cheese
- Bake uncovered for 30 minutes
- Garnish with chopped tomatoes and dried basil, if desired. Return to oven for 5 additional minutes.
- Serve hot. Pairs well with rice, mashed potatoes, or green salad.
This recipe will serve 2-4 people, but it’s very simple to double or triple this recipe to serve as many people as you need to. Hope you enjoy!
