Vanishing Breakfast Rolls

If you are looking for a delicious, sweet, and incredibly easy breakfast recipe, look no further! Welcome to one of my favorite breakfasts and a family tradition!

This recipe is the breakfast that my family eats on Christmas morning. I learned this recipe in my seventh grade cooking class, brought it home to my mom, and it’s been one of my favorite traditions ever since. It’s a tradition that I want to continue with my own children for Christmas morning.

INGREDIENTS

  • 1 can (8 ct) Pillsbury Grands! Southern Homestyle Refrigerated biscuits
  • 1 bag Jet Puffed marshmallows (you actually only need 4 marshmallows or 1/2 a marshmallow per biscuit)
  • Cinnamon sugar
  • 2 Tbsp butter; melted

PREPARATION

  • Preheat the oven to 400°F
  • Grease a muffin tin. You can use cooking spray, butter, or cooking oil (I prefer coconut oil)
  • Remove half as many marshmallows from the bag as you have biscuits (4 marshmallows for 8 biscuits). Tear or cut each marshmallow in half.
  • Remove the biscuits from the can. Using your hands (washed please!) flatten and stretch each biscuit until it is large enough to completely wrap around half a marshmallow.
  • Take one marshmallow half and completely submerse in the melted butter. Then toss it into a bowl of cinnamon sugar and coat it thoroughly.
  • Take the buttery, sugary, marshmallow half and place it in the center of a stretched biscuit. Pull the edges of the biscuit around the marshmallow until you have an enclosed ball of dough with the marshmallow inside.
  • Place the dough ball with the folded and pinched side down in the muffin tin. Repeat for the remaining biscuits and mallows.
  • Drizzle remaining butter over the dough balls and sprinkle with cinnamon sugar.
  • Place in the oven and bake for 12-15 minutes. Don’t be surprised if some of the marshmallow escapes the biscuits.
  • Serve warm! (Especially delicious if served Christmas morning after opening gifts as a family).
