Don’t get me wrong, I love a good turkey sandwich in late November, but having a few other options for leftover Thanksgiving food is a great way to mix things up!

TURKEY
One of the best ways to use up leftover turkey (other than sandwiches) is in noodle soup! Add chicken broth, sliced carrots, sliced celery, half an onion, a bay leaf, salt and pepper to a pot and bring to a boil. Cook until vegetables are tender. Cook noodles separately, strain, and add to the broth. Remove the bay leaf and onion. Add chunks of turkey and serve!
MASHED POTATOES
It may sound strange, but mashed potatoes are great served under chicken (or turkey) noodle soup!
ROLLS
The easiest thing to do with leftover rolls is to freeze them in a Ziploc bag and thaw them for a future meal
Another option is to use leftover rolls to make sliders! Slice the rolls open and place all the bottoms on a cookie sheet, add whatever meats and cheeses and condiments you’d like, then add the tops and bake until they are warmed through and cheese is melted.

STUFFING
Take any leftover bread stuffing that you have and separate into muffin tin (loosely, not packed in tight). Beat eggs with a little milk, salt, and pepper. Add the milk mixture to the stuffing, filling the muffin tin 1/2 – 2/3 of the way full. Bake at 350°F until the eggs are cooked through.
GRAVY
Have you seen Friends? Have you heard of the moist maker? If not, a moist maker is a third slice of bread, soaked in gravy and added to the middle of a Thanksgiving turkey sandwich. Just try it. Trust me.
YAMS
I love some good yams and I think they make fabulous leftovers. But, they also make great baby food. Mash them up with a fork or blend them until smooth for a younger baby. Then you can serve them or freeze them to serve later.

Well, there you go! Six ways to eat leftover Thanksgiving dinner other than plain old turkey on bread. Do you have any other favorite ways to eat leftovers? Let me know in the comments below!
